We do not eat them. There is an old Texas method I have heard for years, I will be brief, get a board, season fish, put all kinds of stuff on the fish. grill it and hover over it then, when finished, throw the carp away and eat the board. Just a report from the South. Salt.

The reason I ask is that I assumed they didn't taste good. The Japanese like to put them in hot pots - like a stew - and that kills off the bad or muddy flavour. Same with other odd species we might not consider chowing down on.
