I find that if I don't get the timing of the cast properly then I'll have more wind knots. You may also want to try a shorter leader until you become more proficient at casting. All the best to you.
Two common causes of wind knots are dropping the rod tip too low on the back cast and failing to smoothly accelerate the rod through on the cast. Watch your back cast and don't let your rod drop below 1 o'clock. Once the back cast is straightened apply the forecast, steadily accelerating it to a quick (but not snappy sharp) stop. This should help eliminate the majority of your wind knots.
Try and open up your loops when casting, this will help the leader from getting tangled (avoid the leader touching it's self cause it may catching on your knots.)
How about your knots themselves? ie: Fly line to leader, leader to tippet. I find if mine are too "chunky",(not tied tight enough or just not tied properly) or if I have excessive tag ends they get caught up with my line and create a mess of problems.
