hey guys i have been tryin to make some "INDIAN CANDY smoked salmon...
can u guys help me and show me ur best ways to do it...for some reason my salmon isn tgoing that red juicy color it shopuld and is kinda salty???

can anyone help and it has been in the smoker for 23 hrs!! thanks [/i]

sounds like too much salt in the brine, if you like it sweeter then make your sugar to salt ratio to 4-1. also half way through the smoking process, which should take no more than 12-14hrs, mix 1/4 cup sugar(brown) demorara of course with just enough water to make a watery syrup baste on fish, gives it a nice glossy appearance and that sweet taste .

Also in this cold weather you need to insolate the smoker . Some people use the box it comes with I use a thick blanket ,this will speed things up.

M ake sure your element is heating up properly they do have to be replaced now and then.
