I bought some pro cured roe from Freds in chilliwack last fall. I did not use all of it and kept in the freezer in the container it came in with borax. My question is whether or not I should throw it out or if it is alright to use.

It should be fine. Jack springs are pigs and are not picky. I would buy new roe for the coho and leave the old stuff for when you are getting jack springs. This is what I do. I always start first light with new roe but if I am hitting jack springs I then switch over to the old roe.
I start first light and fish all my old crap roe till its all gone, I save the good stuff for coho, Jack Springs are not picky if its roe of somesort the jacks are pigs and will be all over it
another tip for you, when my roe is all washed out and that snotty pink skin is on the hook - They will hit that too
Ive caught so many jacks, with just a tiny piece of that tough pigskin leather. Those jacks will hit anything, I mean anything that assembles roe, or smells.
